Tip: Spread aged Mahón and sobrasada, the local peppery sausage, on crusty bread.
Ciutadella old town, Menorca
Down a stone lane in Ciutadella's old town, a locals' bar pours vermouth on tap with olives, Mahón cheese and fried squid — the pre-dinner ritual Menorcans actually keep. A glass on a tiny square is a perfect wind-down after a day in the water.

A quiet cove, Formentera
On Formentera's calm coves, rough-shack seafood spots cook fideuà — the noodle 'paella' — over a wood fire and serve it straight from the pan to a table in the sand. Blinding shallows just beyond, slow afternoons.
