Every evening a row of family grills sets up by the harbour, where the day's squid and reef fish is weighed on the scales, seasoned and charred over coals at your table. It's a local institution the liveaboard crews hit on turnaround days.

The back streets of Labuan Bajo town
Away from the tourist cafés, simple warungs stew the day's fish in turmeric, coconut and tamarind — Flores' ikan kuah kuning — with rice and sambal for a couple of dollars. A plate that tastes of the whole region.
Tip: The sambal here is seriously hot — ask for it on the side first.
